Cocktail Pairing Dinner at Csók Bistro
An evening where gastronomy and contemporary mixology meet in a carefully curated dining experience. The Cocktail Pairing Dinner at Csók Bistro is designed as a journey: each course is paired with a signature cocktail, allowing food and drink to evolve together, course by course.
This is not a traditional dinner with cocktails on the side, but a structured, story-driven evening where the kitchen and the bar work as equal creative partners.
An Immersive Cocktail & Food Experience
For one evening, Csók Bistro transforms into a stage for flavours, aromas, and rhythm. Each dish is matched with a thoughtfully composed cocktail that highlights, contrasts, or enhances the plate it accompanies.
The event is bilingual (Hungarian–English), making it accessible to both local and international guests, while preserving the relaxed yet refined atmosphere that defines Csók Bistro.

PERSIPIEN – Dessert Cocktail

Featured Cocktail: CIUCULA’
The concept behind CIUCULA’ is to highlight the naturally warm, spiced character of Canone Occidentale Rosso vermouth. A lightly sweetened cocoa husk infusion softens the tannic structure, creating a rounder mouthfeel without pushing the drink into dessert territory.
Jamaican allspice liqueur deepens the aromatic profile, adding layered warmth and complexity. The cocktail is served without garnish, in a small coffee cup–style vessel, keeping the presentation minimal and directing full attention to aroma and flavour.
It can be prepared either as a pre-batched cocktail kept warm at a stable temperature or built directly by pouring the hot infusion over the remaining ingredients.
The Philosophy Behind the Other Cocktails
ORIUNDO
A Negroni-inspired cocktail paying tribute to the heritage of Italian travellers and emigrants. The drink opens with a cold, herbal note from the yerba mate foam, followed by a structured, gently bitter and smoky core.
BW Negroni
A refined white Negroni with a subtle balsamic twist. The gin provides a firm backbone, while the gentle acidity of balsamic vinegar adds freshness and depth without disrupting balance.
Persipien
Inspired by a traditional Piedmontese dessert combining peach, amaretto, and chocolate. This cocktail is designed to take a leading role alongside dessert rather than simply accompany it, offering a rich and expressive finish to the evening.
The Mixologist Behind the Evening

Michele Marzella
Born in 1990, Michele Marzella began his career at the Mago di Oz mixology school in Turin. After working as bar manager at Terrazza Ramazzotti in Porto Cervo, he went on to manage Diwan Café, one of Turin’s landmark cocktail bars.
In 2015, he founded the Affini project, which quickly became a reference point for Piedmontese mixology. His work includes international collaborations in New York, London, Paris, and Cuba, with a strong focus on traditional Italian liqueur-making and the world of vermouth.
In 2025, he opened his own production facility dedicated to contemporary liqueurs, vermouths, and distillates. Alongside production, he teaches and consults, sharing his expertise with the next generation of hospitality professionals.
